Super Easy Homemade Cheese Sauce


I love homemade cheese sauce because you can use it in just about anything and it’s healthier for you. This recipe is super easy and super yummy.  The best part is that you can customize it to suit your own tastes by adding whatever cheese you’d like.  This will also make for a fabulous Alfredo Sauce by using just parmesan cheese.  Here’s what you’ll need:

4 tbsp butter
1/4 C. Flour
2 Cups Cold Milk (total) you can also use reduced fat milk
8 oz shredded cheese (I used 4 oz cheddar and 4 oz monterey jack for my homemade mac n cheese last night)
Salt & Pepper to taste if desired (I like to use a little garlic salt :) )

All in all this recipe takes about 10 minutes.  Not bad! First you’ll need to make the roux.  This will keep the cheese from clumping together and/or separating.  Start by melting the butter on medium heat in a med. size pan.  Once the butter is melted, add the flour and stir.  This will become very thick.  Turn the heat down and cook this on low heat stirring constantly for about 3-4 minutes or until it starts to smell like pie crust.  Be careful not to burn it.  Next you’ll want to add 1/2 C of Cold Milk.  It will again become very thick.  Add another 1/2 C Milk and stir until thick.  Add the last cup of milk and stir until thick.  You’ll want to let this cook over med. heat for about 6-7 minutes until bubbly.  You’ll want to stir often at this point so it doesn’t burn.  Once it’s all bubbly add the cheese a handful at a time until melted and you’ve added all of the cheese.  Viola!  Enjoy your homemade cheese sauce.  Let me know what you think!
